Things You\’ll Need

  • 1 (4 to 5 lbs) Ribeye roast

  • 2 tablespoons kosher or sea salt

  • 1 tablespoon fresh cracked black pepper

  • 1 teaspoon finely minced fresh rosemary

Step 1: Take the Chill Off

Remove the roast from the refrigerator and allow to sit at room temperate for about an hour. This will help the beef cook more evenly. Preheat the oven to 350 degrees F.

The roast will take about 18 minutes per pound but the most accurate way to test doneness is with a meat thermometer.

Step 4: Rest

Remove the roast from the oven and allow to rest for 5 to 10 minutes before slicing. Slice against the grain.
