BBQ Ranch Casserole Recipe

Things You\’ll Need

  • 1 pound pasta, any short variety

  • 1 pound chicken breast

  • 2 tablespoons olive oil

  • Salt and pepper

  • 1/2 cup Ranch dressing

  • 3/4 cup barbecue sauce

  • 2 cups Colby Jack cheese, shredded and separated

  • 1/2 red onion, diced

  • 2-3 scallions, sliced

  • 1 15-ounce can diced tomatoes

  • 2 cups frozen sweet corn

  • Parsley, optional

Step 1: Sauté Chicken

Use 2 tablespoons of oil plus a dash of salt and pepper to sauté chicken over medium heat for 3-4 minutes on each side.

Tip

Save time by using rotisserie chicken.

Step 2: Boil Pasta

While chicken is cooking, boil a large pot of water and partially cook pasta for only 4 minutes. Drain and set aside.

Step 3: Mix Ingredients

In a large bowl, combine cooked pasta, barbecue sauce, Ranch dressing, corn, onion, scallions, tomatoes and 1 1/2 cups of cheese.

Step 4: Bake

Pour mixed pasta into a buttered casserole dish. Top with remaining 1/2 cup of Colby Jack cheese. Bake at 350 degrees F for 25 minutes.

Step 5: Serve

If you'd like, add a few sprinkles of chopped parsley on top for color and enjoy!
